Food, Nutrition and Health
Food and health form a crucial theme in EVS education. Children learn about the sources of food, its nutritional value, balanced diet, food habits, hygiene, and the relationship between food and health. This knowledge empowers children to make healthy food choices and develop good health practices from an early age.
Key Concepts
Sources of Food: Food comes from two primary sources - plants (fruits, vegetables, grains, pulses, nuts, oils, spices) and animals (milk, eggs, meat, fish, honey). Children should understand that different foods come from different parts of plants - roots (carrot, radish), stems (potato, ginger), leaves (spinach, cabbage), flowers (cauliflower, broccoli), fruits (apple, mango), and seeds (rice, wheat, pulses). Also important is understanding food chains and the difference between herbivores, carnivores, and omnivores.
Food Groups and Nutrients: Major nutrients include Carbohydrates (energy giving - rice, wheat, bread, potato, sugar), Proteins (body building - pulses, milk, eggs, meat, fish, soybeans), Fats (energy storage, insulation - butter, oil, ghee, nuts), Vitamins (protective - fruits, vegetables), and Minerals (protective - green leafy vegetables, milk, eggs). Water and dietary fiber (roughage) are also essential. Each nutrient has specific functions and deficiency causes specific diseases.
Balanced Diet and Nutritional Deficiencies: A balanced diet contains all nutrients in correct proportions. Deficiency diseases: Vitamin A deficiency causes night blindness; Vitamin B1 causes beriberi; Vitamin C causes scurvy; Vitamin D causes rickets (bone deformities); Iron deficiency causes anemia (weakness, fatigue); Iodine deficiency causes goiter (thyroid swelling); Calcium deficiency affects bone and teeth health. The Mid-Day Meal Scheme in Indian schools aims to address malnutrition among children.
Food Hygiene and Safety: Importance of clean drinking water (boiling/filtering), washing hands before eating, washing fruits and vegetables, proper food storage (refrigeration for perishables, dry storage for grains), checking expiry dates, and avoiding street food from unhygienic sources. Food spoilage due to bacteria, fungi, and insects can cause food poisoning. Preservation methods include drying, refrigeration, pickling, canning, and adding preservatives.
Health and Diseases: Health is a state of complete physical, mental, and social well-being (WHO definition). Diseases are classified as Communicable (infectious - spread from person to person - cold, flu, chickenpox, COVID-19, tuberculosis, diarrhoea) and Non-communicable (non-infectious - diabetes, hypertension, asthma, allergies). Prevention through vaccination, hygiene practices, and healthy lifestyle. Personal hygiene includes regular bathing, oral care (brushing teeth), hand washing, and clean clothing.
